Our Castillo coffee comes from the majestic mountains of the Huila department, a region renowned worldwide for the quality of its specialty coffee. The geographical and climatic conditions of Huila are perfect for coffee cultivation.
It is the result of careful selection and harvesting of the fruit at its optimal point of ripeness. After harvesting, the coffee cherries undergo a meticulous washing process, followed by pulping. Anaerobic fermentation takes place over three days. The final drying stage lasts between eight and ten days in the sun until the desired moisture content is reached, allowing for the full expression of its vibrant profile.
Castillo is a coffee with a distinguished character and a sweet flavor profile, nuanced with notes of chocolate and nuts, an intense aroma with hints of cocoa and a long aftertaste with a panela finish, offering a striking and refined cup.
